Dr. Malone, Can you buy flour in the United States that does not have the additive that allows dough to be hung on hooks? For instance, does King Arthur organic bread flour and King Arthur bread flour have that additive in it?

I stay away from wheat/corn, products for same reason as Scott mentioned + wheat in particular just does a number on my stomach. Terrible cramps. That said, I think it's wonderful when subscribers pass on their wide array of information. Quite helpful!!
I am not certain about that particular property, but check out Atta and other (east) Indian stone ground flours. My issue is glyphosate (Roundup) that is used to kill wheat before the contract harvester arrives to harvest it and I am fairly certain it is forbidden for certain wheat crops in India.
